Plum- Hazelnut Galette

Method:

Combine 1 1/4 cups of flour, butter, 1/2 tsp sugar and salt in your food processor. Pulse until mixture looks like coarse meal. Add ice water, 1 tbsp at a time and pulse until dough holds together. Remove dough, form into a disk. Wrap in plastic wrap and refrigerate for 1 hour.

Clean bowl of food processor; add hazelnuts, 3 tbsp sugar, 2 tbsp flour and pulse until the mixture becomes a ground meal. Place nut-mixture aside.

Preheat your oven to 350°F. Cut plums in half, take out pits, and slice (1/2 inch thick). Toss plums in a bowl with 1/4 cup sugar, 1 tbsp flour and lemon zest (you can also add 1/2 tsp cinnamon here, or any other desired spice). Lightly flour your workspace; roll out dough to a 13 inch round, 1/4 inch thick. Move to a baking dish or cookie sheet. Spread nut-mixture over the dough, leave a 2 inch border. Arrange plums over the nut mixture. Fold edges over the filling. Refrigerate for 20 minutes. Brush crust with egg wash and sprinkle with 2 tablespoons of sugar. Bake until galette is golden and cooked through, about 70 min.

If you can not find plums in your local market anymore, replace with apples or pears for a winter alternative.
