Whole Wheat Pizza with Homemade Tomato Sauce, Zucchini & Goat Cheese

METHOD

PIZZA DOUGH: I added all the ingredients into my bread machine, and set it to the dough setting. If you don’t have one, check out Smitten Kitchen’s technique here

(sinful) TOMATO SAUCE: In a large sauté pan add butter and heat over medium heat. Add sliced onion and sauté until translucent. Add garlic, then peeled/chopped tomatoes, thyme, salt & pepper, crushed red pepper flakes. Cover and reduce heat, let simmer until the tomatoes reduce, about 30 min. Add red wine cover, let simmer for 25-30 min.

ASSEMBLE & BAKE: Preheat your over to it’s top temp. Let the sauce cool, and spread evenly over the rolled out dough. Then add mozzarella, zucchini and goat cheese (in that order). Add fresh ground pepper over the top & bake for 10 minutes or until the crust blisters. Enjoy!

{NOTE: This may seem like a ton of butter (which it most certainly is), you can always reduce the amount, or replace with olive, or any other oil you like. The butter gives the sauce a velvety texture that is oh so yummy, but dangerous.}
